Creamy Mushroom Soup with Toast
Recipe: Creamy Mushroom Soup with Toast
Introduction: This creamy mushroom soup is a rich and comforting dish, perfect for cold days or when you’re in the mood for something warm and hearty. The mushrooms add a deep umami flavor, while the creamy base offers a smooth and velvety texture. Paired with crunchy garlic toast, this soup is a delightful meal or starter.
Ingredients:
2 cups of fresh mushrooms (sliced)
1 small onion (chopped)
2 tablespoons of butter
2 cloves garlic (minced)
3 cups of vegetable or chicken broth
1 cup of heavy cream or milk
2 tablespoons of flour (optional for thickening)
Salt and pepper to taste
Fresh parsley for garnish
2 slices of bread (for toast)
Garlic butter for spreading on toast
Instructions:
Prepare the Toast: Preheat the oven or a pan. Spread garlic butter on the bread slices. Toast them until golden and crispy. Set aside.
Cook the Mushrooms: In a large pot, melt butter over medium heat. Add the chopped onions and garlic, sautéing until softened and fragrant (about 2-3 minutes).
Add Mushrooms: Add the sliced mushrooms to the pot and cook for 5-7 minutes, stirring occasionally, until the mushrooms are tender and lightly browned.
Make the Soup Base: Sprinkle the flour (if using) over the mushrooms and stir to combine. Gradually add the broth while stirring to avoid lumps. Bring the soup to a simmer and cook for 5-10 minutes to thicken.
Add Cream: Stir in the cream or milk and continue to simmer for another 5 minutes, adjusting the thickness to your liking by adding more broth or cream.
Season and Garnish: Season with salt and pepper to taste. Garnish with freshly chopped parsley.
Serve: Pour the soup into bowls and serve with the garlic toast on the side.
Enjoy your warm, creamy mushroom soup!
