Ingredients:
4 medium potatoes, peeled and grated
1 small onion, grated
2 large eggs
1/4 cup all-purpose flour
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon nutmeg (optional)
1/4 cup vegetable oil for frying
Applesauce or sour cream (for serving)
Directions:
Prepare Potatoes and Onions:
Peel and grate the potatoes using a box grater or food processor. Place the grated potatoes in a clean kitchen towel or cheesecloth and squeeze out as much moisture as possible.
Grate the onion and mix it with the grated potatoes.
Mix Batter:
In a large bowl, combine the grated potatoes and onions with eggs, flour, salt, pepper, and nutmeg (if using). Stir until well combined.
Heat Oil:
Heat the vegetable oil in a large skillet over medium heat. You want enough oil to coat the bottom of the pan, so the pancakes fry evenly.
Fry the Pancakes:
Scoop about 2 tablespoons of the potato mixture into the hot oil and flatten it with the back of a spoon to form a thin pancake.
Fry for 3-4 minutes on each side until golden brown and crispy. Transfer to a paper towel-lined plate to drain excess oil.
