Sweet Coconut Tapioca Dessert

Ingredients:
1/2 cup small white tapioca pearls
2 cups water (for boiling the pearls)
1 cup coconut milk
1/4 cup sugar (adjust to taste)
1/4 teaspoon salt
Optional: 1/4 teaspoon vanilla extract or pandan leaf for flavor
Instructions:
Boil the Tapioca Pearls:
Bring 2 cups of water to a boil.
Add the tapioca pearls and stir occasionally.
Cook for 10–15 minutes until the pearls become mostly translucent with a small white dot in the center.
Turn off the heat, cover the pot, and let it sit for another 10 minutes to fully cook the pearls.
Rinse with cold water and drain.
Make the Coconut Sauce:
In a saucepan, combine coconut milk, sugar, and salt.
Heat gently over medium-low heat, stirring until the sugar dissolves. Do not boil.
(Optional) Add vanilla or pandan leaf for extra flavor.
Combine:
Add the cooked tapioca pearls into the coconut sauce and mix well.
Heat for 2–3 more minutes, stirring gently.
Serve:
Can be served warm or chilled.
