Ingredients:

2 cups fresh okra, sliced into 1/2 inch pieces

1/2 cup cornmeal or breadcrumbs

1/4 cup all-purpose flour

1/2 teaspoon salt

1/2 teaspoon black pepper

1/2 teaspoon garlic powder (optional)

1/4 teaspoon paprika

1 egg (beaten)

Instructions:

Prepare the okra: Wash and dry the okra completely before slicing. This helps reduce sliminess.

Season and coat: In a bowl, mix cornmeal, flour, salt, pepper, garlic powder, and paprika. Dip okra slices into the beaten egg, then coat them in the dry mixture.

Fry: Heat oil in a frying pan over medium-high heat. Add okra in batches and fry until golden and crispy (about 3-4 minutes per side).

Drain and serve: Remove with a slotted spoon and place on paper towels to absorb excess oil. Serve hot as a snack or side dish.
