★Ingredients
For the Base:
50 g sugar
1 egg
40 ml oil
50 g flour
3 g baking powder
Zest of 1 lemon
For the Lemon Mousse:
Juice of 2 lemons
2 eggs
15 g butter
50 g sugar
1 gelatin sheet (3 g)
200 ml unsweetened whipping cream
For the Meringue:
150 g sugar
2 egg whites
50 g water
Pinch of salt
★Directions
Prepare the Base:
Whisk the egg, sugar, and lemon zest together. Add oil, flour, and baking powder.
Pour into a mold and bake at 180°C for 9 minutes. Let cool.
Make the Lemon Mousse:
In a saucepan, mix sugar, lemon zest, eggs, and lemon juice. Cook until thickened.
Stir in butter and pre-soaked gelatin. Cover with plastic wrap and cool completely.
Whip the cream until stiff and gently fold it into the cooled lemon mixture.
Assemble the Cake:
Soak the cake base lightly with milk.
Spread the lemon mousse over the base. Refrigerate for at least 4 hours.
Prepare the Meringue:
Boil sugar and water to create a syrup.
Beat egg whites with a pinch of salt until foamy, then slowly pour in the hot syrup while whisking continuously until stiff peaks form.
Decorate:
Spread or pipe the meringue over the mousse layer and lightly brown with a blow torch for a golden finish.
