It’s so delicious that I make it three times a week: I only use 4 ingredients and that’s it!

Ingredients
150 g wheat flour
3 eggs
100 g sugar
1 teaspoon baking powder
2 medium apples
Zest and juice of 1 lemon
A pinch of salt
Butter to grease the pan
Parchment paper (optional)
Optional extras:
1/2 teaspoon ground cinnamon
Vanilla essence (a few drops)
2 tablespoons of regular wheat flour, if you want a firmer pie
A handful of chopped walnuts or raisins
Step by Step Preparation
Separate the eggs : Break the eggs and separate the whites from the yolks. Beat the whites with a pinch of salt until they form a firm, but not dry, foam.
Mix egg yolks and sugar : In another bowl, beat the egg yolks with the sugar until you get a very foamy, clear mixture with increased volume.
Flavor : Add the lemon juice and zest and, if desired, a few drops of vanilla or cinnamon essence.
Mix : Add the baking powder and flour, mixing well. Then, add the beaten egg whites with gentle, folding movements, being careful not to lose volume.
Add the apples : Peel and cut the apples into thin slices or cubes. Mix them into the dough carefully so as not to break them.
Prepare the pan : Grease and flour a medium pan or use parchment paper.
Bake : Pour the mixture into the pan and bake in a preheated oven at 180°C for 40 minutes, or until golden and firm to the touch.
Tips and Recommendations
Use green apples for a more tart flavor, or red apples for a sweeter, milder result.
If the dough seems too liquid, add 2-3 tablespoons of flour without changing the taste.
For a gluten-free version, use rice flour or a premix suitable for celiacs.
Adding walnuts, almonds or raisins adds an extra touch of texture and flavor.
Dust with powdered sugar after it cools, or make a simple glaze with sugar and lemon juice.
This pie can also be made in individual muffin tins.
Store in the refrigerator for up to 3 days or freeze in portions.
