Ingredients:
2 medium zucchinis
1 cup breadcrumbs (or panko for extra crunch)
½ cup grated Parmesan cheese (optional)
2 large eggs
1 cup all-purpose flour (or almond flour for a low-carb version)
1 teaspoon garlic powder
1 teaspoon onion powder
½ teaspoon salt
½ teaspoon black pepper
Cooking spray or olive oil for drizzling
Instructions:
1. Prepare the Zucchini:
Preheat your oven to 425°F (220°C).
Wash and dry the zucchinis. Cut them into fry shapes, about 1/4 inch thick.
2. Set Up Breading Station:
In one bowl, place the flour, garlic powder, onion powder, salt, and pepper.
In a second bowl, beat the eggs.
In a third bowl, combine the breadcrumbs and Parmesan cheese (if using).
3. Bread the Zucchini:
Dip each zucchini fry first into the flour mixture, shaking off any excess.
Next, dip it into the beaten eggs, allowing any excess to drip off.
Finally, coat the zucchini fry in the breadcrumb mixture, pressing gently to adhere.
4. Bake:
Place the breaded zucchini fries on a baking sheet lined with parchment paper. Make sure they are spaced out and not touching to ensure even baking.
Lightly spray or drizzle the fries with cooking spray or olive oil.
Bake in the preheated oven for about 20-25 minutes, or until golden brown and crispy. Flip the fries halfway through for even cooking.
5. Serve:
Remove from the oven and let cool for a couple of minutes. Serve warm with your favorite dipping sauce, such as marinara, ranch, or garlic aioli.
