For the potato base:
4 medium potatoes, peeled and cut into wedges
2 tbsp olive oil
Salt and pepper, to taste
1/2 tsp paprika (optional, for extra flavor)
For the egg mixture:
6 large eggs
1/4 cup milk (or cream for a richer taste)
1/2 cup shredded cheese (cheddar, mozzarella, or a mix)
1/4 cup diced bell peppers (any color)
1/4 cup diced onions
Salt and pepper, to taste
Fresh herbs for garnish (parsley or chives)
Instructions:
Prepare the potatoes:
Preheat your oven to 375°F (190°C).
Heat olive oil in a large oven-safe skillet over medium heat.
Add the potato wedges to the skillet and season with salt, pepper, and paprika.
Cook for 10-12 minutes, stirring occasionally, until the potatoes start to soften and brown slightly.
Prepare the egg mixture:
While the potatoes are cooking, whisk together the eggs, milk, salt, and pepper in a bowl.
Stir in the diced bell peppers, onions, and shredded cheese.
Combine and cook:
Once the potatoes are tender, pour the egg mixture evenly over them in the skillet.
Lower the heat to medium-low, cover the skillet, and cook for about 5-7 minutes, or until the eggs begin to set.
Finish cooking in the oven:
Transfer the skillet to the preheated oven and bake for an additional 10-12 minutes, or until the eggs are fully set and lightly golden.
Serve:
Remove from the oven and let it cool for a couple of minutes.
Garnish with fresh herbs like parsley or chives before serving.
